A delightful Paleo-friendly chicken recipe with a burst of lemon and garlic flavors, cooked to perfection in the Instant Pot.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
- Juice of 2 lemons
- Zest of 1 lemon
- Fresh parsley for garnish
Instructions:
Season chicken breasts with oregano, thyme, paprika, salt, and black pepper
Set Instant Pot to 'Saut' mode and heat olive oil
Add minced garlic and saut until fragrant
Add seasoned chicken breasts and brown on both sides
Pour in chicken broth, lemon juice, and lemon zest
Close the Instant Pot lid, set to 'Poultry' mode, and cook for 10 minutes
Once done, perform a quick pressure release
Garnish with fresh parsley before serving
