Bacon, Cheddar, and Pear Panini



A delicious combination of savory bacon, sharp cheddar cheese, and sweet pear slices, grilled to perfection in a panini press or grill pan.

Ingredients:

  • 4 slices bacon
  • 4 slices cheddar cheese
  • 1 ripe pear, thinly sliced
  • 8 slices sourdough bread
  • 2 tablespoons butter, softened

Instructions:

Over medium-low heat, cook the bacon in a skillet until it's crispy

Place the bacon on paper towels to drain

Warm up a grill pan or panini press

Put cheddar cheese, bacon, and pear slices between two slices of sourdough bread to make a sandwich

Put softened butter on the outside of each sandwich

It should take about 4 to 5 minutes per side for the bread to turn golden brown and the cheese to melt on a panini press or grill pan

Take it off the heat, cut it in half, and serve it hot

Mushroom & Caramelized Onion Polenta



This vegan dish is comforting and filling, with caramelized onions and mushrooms on top of creamy polenta. It's great for any occasion.

Ingredients:

  • 1 cup polenta
  • 3 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 cups mushrooms, sliced such as cremini or button
  • 2 cloves garlic, minced
  • 1/4 cup nutritional yeast
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions:

Bring the vegetable broth to a boil in a saucepan

Pour the polenta in slowly while stirring all the time to avoid lumps

Turn down the heat and keep cooking, stirring often, for 20 to 25 minutes, or until the polenta is thick and creamy

In the meantime, heat the olive oil over medium heat in a different pan

It will take about 15 to 20 minutes of stirring every now and then while the onions are cooking until they are caramelized and golden brown

Add the mushrooms and garlic that has been minced to the pan with the onions

Cook for another 5 to 7 minutes, until the mushrooms are soft

Add the nutritional yeast and salt and pepper to taste after the polenta is cooked

You can serve the polenta with the caramelized onion and mushroom mix on top of it

Add fresh parsley as a garnish if you like

Brookies



These brookies are the perfect mix of brownies and cookies. They are gluten-free, vegan, dairy-free, and don't have any added sugar. They're soft, chocolatey, and completely impossible to resist!

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut oil, melted
  • 3/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 cup dairy-free chocolate chips
  • 1/2 cup chopped walnuts optional

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a bowl, whisk together gluten-free all-purpose flour, almond flour, cocoa powder, baking powder, and salt

In another bowl, mix melted coconut oil, coconut sugar, maple syrup, applesauce, and vanilla extract until well combined

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms

Fold in dairy-free chocolate chips and chopped walnuts, if using

Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them apart

Bake for 10-12 minutes, or until the edges are set but the centers are still soft

Allow brookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely

Enjoy these delicious brookies with a glass of almond milk!

Chocolate Cupcakes with Ganache Frosting



Enjoy these tasty chocolate cupcakes that don't have nuts in them. The ganache frosting is rich and creamy. This Paleo-friendly recipe is great for when you want something sweet but don't want to change your diet.

Ingredients:

  • 1/2 cup coconut flour
  • 1/2 cup cocoa powder
  • 1/4 cup arrowroot powder
  • 1/4 cup coconut sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup coconut milk
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • For Ganache Frosting:
  • 1/2 cup dairy-free chocolate chips
  • 1/4 cup coconut milk
  • 1 tablespoon maple syrup

Instructions:

Preheat your oven to 350F 175C

Line a cupcake tin with paper liners

In a mixing bowl, combine the coconut flour, cocoa powder, arrowroot powder, coconut sugar, baking soda, and salt

In a separate bowl, whisk together the eggs, coconut milk, melted coconut oil, maple syrup, and vanilla extract

Pour the wet ingredients into the dry ingredients and mix until well combined

Fill each cupcake liner about 2/3 full with the batter

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into a cupcake comes out clean

Allow the cupcakes to cool completely before frosting

For Ganache Frosting: In a small saucepan, heat the coconut milk over low heat until it starts to simmer

Remove from heat and add the dairy-free chocolate chips and maple syrup

Stir until smooth and well combined

Let the ganache cool for a few minutes, then spread it over the cooled cupcakes

Allow the ganache to set before serving

Mozzarella Mushroom Burgers

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 burger buns
  • 4 slices mozzarella cheese
  • 1 cup sliced mushrooms
  • 1 tbsp olive oil
  • 1/4 cup marinara sauce

Instructions:

Put the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper in a bowl and mix the ground beef in it until everything is well mixed

Four burger patties should be made from the mixture

Set a pan on medium heat and add the olive oil

The patties should be cooked for four to five minutes on each side, or until they are done the way you like them

Saut the mushrooms in the same pan until they are soft and a little browned

Toasted the burger buns until they are just barely golden

Put a cooked patty on the bottom half of each bun to make the burgers

Put some marinara sauce and a slice of mozzarella cheese on top of each patty

Put the mushrooms that have been sauted on top of the sauce, and then add some fresh basil leaves on top

Put the top half of the bun on top and serve hot

Ingredients:

  • 1 lb ground beef
  • 1 cup diced bell peppers

  • 8 cups popped popcorn

BBQ Lentil Veggie Burger with Mango Carrot Slaw



A satisfying and tasty vegan burger with a tasty BBQ lentil and vegetable patty and a cool mango carrot slaw on top. This plant-based burger is great for a summer barbecue or any other time you want a tasty one.

Ingredients:

  • 1 cup cooked green lentils
  • 1/2 cup finely grated carrots
  • 1/2 cup diced ripe mango
  • 1/4 cup diced red onion
  • 1/4 cup breadcrumbs
  • 2 tbsp BBQ sauce
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 whole wheat burger buns
  • Lettuce leaves for garnish
  • Vegan mayo for dressing

Instructions:

Use a fork or potato masher to mash the cooked lentils in a large bowl

To the mashed lentils, add diced mango, red onion, breadcrumbs, BBQ sauce, smoked paprika, garlic powder, salt, and pepper

Combine well by mixing

Take the mixture and shape it into four burger patties

Then, put them on a baking sheet that has been lined with parchment paper

Set a grill or grill pan over medium-high heat to get it hot

The patties should be cooked for four to five minutes on each side, or until they are hot all the way through and have grill marks

For a minute or two, toast the burger buns on the grill until they get a little brown

Spread vegan mayo on the bottom half of each bun before putting the burgers together

After putting a lettuce leaf on top of the mayo, add a lentil veggie patty

If you want, you can add more BBQ sauce to the patty's top

Then, add a big spoonful of mango carrot slaw

To finish the burger, put the top half of the bun on top of the slaw
