Ingredients:
- 8 cups popped popcorn
- 1 cup peanuts
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup light corn syrup
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup chocolate chips
Instructions:
Preheat oven to 250F 120C
In a large mixing bowl, combine popped popcorn and peanuts
In a saucepan, melt butter over medium heat
Stir in brown sugar, corn syrup, and salt
Bring to a boil, stirring constantly
Boil without stirring for 4 minutes
Remove from heat and quickly stir in baking soda
Be careful as it will bubble up
Pour caramel mixture over popcorn and peanuts, stirring to coat evenly
Spread popcorn mixture onto a large baking sheet lined with parchment paper
Bake for 45 minutes, stirring every 15 minutes
Remove from oven and let cool completely
Melt chocolate chips in a microwave-safe bowl in 30-second intervals until smooth
Drizzle melted chocolate over cooled popcorn mixture
Allow chocolate to set before serving or packaging as a gift
