Build-Your-Own Seafood Chowder



This Build-Your-Own Seafood Chowder is a hearty and comforting dish that is great for a night in. It's gluten-free and dairy-free, and it's made with a variety of seafood and tasty vegetables to meet the needs of people with different diets. Adding coconut milk makes the chowder creamy without using dairy, and arrowroot powder makes it perfectly thick.

Ingredients:

  • 1 lb mixed seafood such as shrimp, scallops, and white fish
  • 4 cups seafood broth
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 1 cup full-fat coconut milk
  • 2 tablespoons arrowroot powder
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

Put olive oil in a big pot and heat it over medium-low heat

Put in garlic, onions, carrots, and celery

It will take about 5 minutes of sauting until the vegetables are soft

Put in the potatoes, thyme, and seafood broth

Turn the heat down to low and cook for about 15 minutes, until the potatoes are soft

Add a few tablespoons of cold water to arrowroot powder in a small bowl and mix them together to make a slurry

To make the chowder thicker, stir the slurry into it

Add coconut milk and a mix of seafood

For about 5 to 7 minutes, or until the seafood is fully cooked, let it simmer

Add pepper and salt to taste

Enjoy while hot!
