Ingredients:
- 1 cup polenta
- 3 cups vegetable broth
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 2 cups mushrooms, sliced such as cremini or button
- 2 cloves garlic, minced
- 1/4 cup nutritional yeast
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructions:
Bring the vegetable broth to a boil in a saucepan
Pour the polenta in slowly while stirring all the time to avoid lumps
Turn down the heat and keep cooking, stirring often, for 20 to 25 minutes, or until the polenta is thick and creamy
In the meantime, heat the olive oil over medium heat in a different pan
It will take about 15 to 20 minutes of stirring every now and then while the onions are cooking until they are caramelized and golden brown
Add the mushrooms and garlic that has been minced to the pan with the onions
Cook for another 5 to 7 minutes, until the mushrooms are soft
Add the nutritional yeast and salt and pepper to taste after the polenta is cooked
You can serve the polenta with the caramelized onion and mushroom mix on top of it
Add fresh parsley as a garnish if you like
